Sunday Funday everyone! I hope you’re all soaking up the last bits of summer (noooooo!) I’ve been making these Funfetti Brown Rice Crispy Treats all summer, for every occasion, and sometimes for no occasion at all! I’ve never met a kid who doesn’t love rice crispy treats, mine included, plus sprinkles?! Obviously they’re all hooked. I love using brown rice crisp cereal in these nostalgic treats because it adds a little nuttiness and I love going for an organic cereal option like this.
If you’ve never made homemade rice crispy treats, you have to get on it! They’re 1000x better than the store bought version, and super quick and easy to throw together. Also, HI no-bake dessert in August! My sister throws in a tablespoon or two of peanut butter, and that is always a good thing 🙂 I melt the butter in a large pot, then add the marshmallows, and stir until melty and soft. Then I add the brown rice crisp cereal and stir to combine. Just before the whole mixture is totally combined, I add in a few tablespoons of colorful sprinkles, and gently fold them in. I pat the mixture in a 9×13″ baking pan lined with foil, and add a few more sprinkles on top. Let the treats set up, cut in 12 or 16 bars, and bask in the glory of being the most popular Mom on the block (or the building)!
These Funfetti Brown Rice Crispy Treats are perfect for birthday party favors, or wrapped up for a special lunchbox dessert, or just casual bribery to get your kids to do stuff. We all do it, it’s cool.

Funfetti Brown Rice Crispy Treats
A little spin on a timelessly nostalgic classic! Sprinkles + nutty crisp brown rice cereal = instant smiles!
Ingredients
- 4 T salted butter
- 15 oz. (1.5 bags) marshmallows
- 1 tsp pure vanilla extract
- 1/2 tsp kosher salt
- 10 oz. brown rice crisp cereal (1 regular size box)
- 3 T colorful sprinkles
Instructions
Line a 9x13" pan with aluminum foil, and spray with nonstick cooking spray.
Melt butter and salt in a large pot over medium heat. Quickly stir in the marshmallows and cook until completely melted. Remove from heat. Add the vanilla extract and combine. Add the brown rice crisp cereal to the pot and mix until well-coated and combined. Add in 2/3 of the funfetti sprinkles, and gently stir to incorporate.
Pour the mixture into the lined pan. Spray your hands or a rubber spatula with nonstick cooking spray and press down the mixture evenly into the pan. Sprinkle the remaining tablespoon of sprinkles on top. Let the treats set up and cool for about 45 minutes, then cut into 12 or 16 squares.
Enjoy! Store in an airtight container for up to 3 days.
