Guys! I was allll ready to give you a quick, no-churn ice cream recipe, but then my best friend D made my summer dreams come true! She bought me this Cuisinart Ice Cream maker, and I absolutely LOVE it! No, this isn’t an ad, it’s that good! By the way, did you know that my first job EVER was scooping ice cream at a Soda Fountain?? My love of ice cream runs real deep.
You may have noticed that is this first ice cream recipe that I’m publishing!! I knew that it had to be my favorite combo, mint and chocolate. Here’s the problem I usually run into: you have your mint chip, and then you have cookies & cream, but you can RARELY find mint cookies & cream, which is my ice cream happy place! So, I’ll be fair, for this recipe I used a box of Candy-Cane Joe-Joe’s From Trader Joes that I had hiding in the freezer (they were still PERFECT!) but you could easily sub in crushed grasshopper cookies, or just use regular Joe-Joe’s (Oreo’s) if you like!
I realize that ice cream machines may all work very differently, but if you have a Cuisinart with the freezable bowl, you want to make sure that the bowl is kept frozen solid, at least overnight. In addition, the ice cream mixture needs to be kept VERY cold right up until you pour it into the mixer. After the ice cream has frozen in the machine, transfer it to an airtight container, and chill it in the freezer for at least 2 hours before serving.
Easy Peppermint Cookies & Cream Ice Cream

Ingredients
- 2 c heavy cream
- 1 c skim milk, 2%
- 3/4 c sugar
- 1 T pure vanilla extract
- 2 c crushed peppermint chocolate sandwich cookies Joe Joe's or Oreo's
Instructions
Using the Cuisinart Ice Cream maker, freeze the bowl of the machine for at least 6 hours or overnight.
In a large mixing bowl, combine the heavy cream, skim milk, sugar, and vanilla extract. Whisk well to combine, dissolving the sugar.
With the machine running, pour the cream mixture into the bowl, and churn for about 10-15 minutes. Add the chopped cookies to mixture with the machine running, and churn for another minute. Transfer the ice cream to an airtight container and freeze for another 2 hours to solidify the ice cream.
Recipe Notes
Pro Tip: Run the ice cream scoop under warm water between each time you scoop. This gives a nice clean scoop, and releases the ice cream easier.
