Summer in a glass! This Watermelon Strawberry Mint Icee is so refreshing and light, I know you’re going to love it!
The thing about July is that you need ALL the frozen drinks. I feel like my day is one continuous frozen drink after another. It start with an smoothie, then I’ll have an iced coffee, somewhere in there I’m icing some seltzer. I can never forget an afternoon frozen pick-me-up! Now that we’re a family of five, and everyone is eating all.the.time, I’ve graduated from buying the shrink-wrapped wedge to a WHOLE watermelon! One of my favorite things to do with what seems like endless watermelon, is blend it up with frozen strawberries, tons of fresh mint, a squeeze of lime, a spoonful of honey, and ice! It is the most refreshing drink EVER and peak Summer!
This homemade Icee is lighter than a smoothie because the melon is so juicy, but more than juice because the strawberries are frozen and thicken it all up! The strawberries are so amazing right now that I buy fresh berries and freeze them for a few hours before I make the drink, but if you can only find frozen strawberries, it’s totally fine! I like to add a couple teaspoons of honey to enhance the flavor of the melon and berries, but that is totally optional! Another optional addition to take this Icee to the next level would be a shot or two of light rum or tequila blanco! Just pour it into the blender along with the fruit, and blend on high for 2 minutes 🙂

Watermelon Strawberry + Mint Icee
Summer in a glass! A homemade Icee that is super refreshing, light, and meant to be shared!
Ingredients
- 4 c fresh watermelon
- 1 lb. frozen strawberries
- 1 c fresh mint leaves
- 1 small lime, juiced
- 1-2 tsp raw honey, optional but recommended
- 2 c ice cubes
Instructions
Combine the watermelon, strawberries, mint, lime juice, and honey in a high powered blender. Blend on high for 2 minutes.
Drop in the ice cubes through the hole in the lid of the pitcher, one at a time, until completely blended and ice-y!
Recipe Notes
To make this drink into a cocktail if you're over 21, add 2 shots of tequila blanco or a light rum to the pitcher and blend with the fruit.
